Episode 19: Le Top Chef (The Top Chef)

Gratien Leroy is a small-town accountant with big culinary dreams. But when France’s most popular cooking show announces an open call for the country’s best amateur cooks, does Gratien have what it takes to join the ranks of his country’s top chefs?

Ngofeen: In the tiny town of Nouzonville, on the French border with Belgium, there’s a café called Le Cardinal, where locals often gather after watching championship soccer games. Once upon a time, 28-year-old Gratien Leroy rarely missed a celebratory drink, and he rarely missed a game. Not anymore.

Gratien: Si je dois choisir entre regarder un match de championnat ou regarder l’émission Top Chef, je vais regarder Top Chef. Pour moi, cette émission a été une révélation. Grâce à elle, j’ai découvert le monde de la haute gastronomie.

Ngofeen: France’s version of Top Chef, the TV cooking competition, features talented French chefs preparing elaborate gourmet cooking, haute cuisine or haute gastronomie. The first time Gratien saw the show, l’émission, he was completely hooked.

Gratien: J’étais très impressionné. Je trouvais que les chefs faisaient des choses extraordinaires. Les plats étaient tellement beaux, tellement complexes… Depuis la première saison de cette compétition, en 2010, j’ai vu tous les épisodes.

Ngofeen: Gratien’s buddies teased him for being obsessed with a cooking show. But Gratien didn’t just want to watch. He wanted to cook like the chefs on the show. So he watched every episode and copied every recipe. After eating his food, his friends started to take him a bit more seriously.

Gratien: Ils me disaient : « Tu parles de cuisine tout le temps, et tu cuisines très bien. C’est toi qui devrais participer à l’émission Top Chef. »

Ngofeen: Gratien would laugh it off. Top Chef was a contest for professional cooks in cities like Paris or Lyon. Gratien was an accountant from a tiny, unknown French town in the middle of Europe’s vast Ardennes forest. How could he possibly compete?

Gratien: Oui, j’étais passionné. Mais j’étais un simple amateur. Je n’avais pas fait d’école de cuisine. Top Chef, ce n’est pas un concours pour les amateurs. Je ne pensais pas pouvoir, un jour, participer à cette compétition…

Ngofeen: The first time Gratien fell in love with a dish, he was eight or nine years old. His family had taken him to a local restaurant where he ordered une aumonière: a purse-shaped pastry shell with a sweet or savory filling. Gratien’s aumonière was filled with roasted apples and blood sausage, du boudin noir.

Gratien: J’ai adoré cette aumonière au boudin noir, alors j’ai demandé à ma mère si je pouvais la cuisiner à la maison. Ma mère m’a dit oui. On est allés chercher les ingrédients, puis on a préparé l’aumonière ensemble. J’étais très fier du résultat !

Ngofeen: But even though Gratien loved to cook, neither he nor his parents ever considered it a viable career option. At school, he liked math and got good grades. Students like him were expected to study business or engineering, not cooking.

Gratien: En France, si tu as des bonnes notes à l’école, tu fais des études générales : le français, les sciences, les langues, les matières comme ça. Les gens me disaient : « Fais un bac scientifique. Tu verras, ce sera utile plus tard. » En général, les études techniques, comme la cuisine, sont plutôt destinées aux élèves moins bons. C’est dommage, parce que ces élèves sont passionnés, mais le système scolaire ne les favorise pas.

Ngofeen: So Gratien did what was expected of him. He didn’t pursue his passion. He went to college in Reims, majored in business, and became an accountant at a big firm in the city closest to his hometown. But once Gratien discovered Top Chef, he treated it like his own personal cooking school.

Gratien: Au début, je prenais des notes sur les différentes techniques des chefs. J’étudiais les ingrédients. Pendant la semaine, je cuisinais pour moi. Et le week-end, je cuisinais pour mes parents et mes amis.

Ngofeen: The first Top Chef recipe Gratien copied was veal ballotine. It’s a thin cut of meat flattened, then filled with mushrooms and foie gras stuffing, la farce. It’s then rolled tightly into a log and poached in chicken stock, du bouillon de volaille.

Gratien: D’abord, j’ai fait la farce. Ensuite, j’ai enroulé un morceau de viande de veau très fin autour. Enfin, j’ai mis cette ballotine dans un bouillon de volaille, avec des légumes. Ça a demandé beaucoup de temps, et beaucoup de travail. J’étais très fier du résultat.

Ngofeen: With each new season of the show, Gratien’s cooking became more elaborate. He bought dozens of cookbooks and studied them like textbooks. And he invested in increasingly obscure, specialized kitchen gear, like a fish smoker, a sous-vide cooker… and everything else that looked good to him.

Gratien: Ma passion devenait de plus en plus importante pour moi. La cuisine occupait tout mon temps libre. Mes parents et mes copains adoraient ça ! Ils trouvaient mes plats délicieux.

Ngofeen: One day, in November 2018, Gratien and some colleagues decided to treat themselves to a very special feast: a year-end celebratory meal at a famous, Michelin-starred restaurant, un restaurant étoilé. It’s called L’Assiette Champenoise and it’s in a luxury hotel in the region of Champagne. Gratien had never been to such a fine restaurant.

Gratien: C’était la première fois que j’allais dans un restaurant étoilé. J’étais vraiment très impressionné. Tout était merveilleux. Je trouvais la décoration magnifique, et très élégante : les chandeliers en cristal, les assiettes en porcelaine, la lumière des bougies… On était dans la région Champagne, alors bien sûr, le vin et le champagne étaient incroyables ! C’était comme dans un rêve.

Ngofeen: Gratien and his friends ordered a special tasting menu, and waiters in black tuxedos started bringing them dishes, each more delicious and refined than the last. Before each course, the head server would tell them the story behind the dish. Gratien was smitten.

Gratien: C’est difficile à exprimer avec des mots. C’était vraiment magique. Je découvrais des saveurs et des textures uniques. Je sentais toute la technique derrière chaque plat. C’était la première fois que je vivais ce genre d’expérience.

Ngofeen: Gratien raved about every dish and peppered the waiters with questions. At the end of the meal, the head waiter came to the table, and asked if Gratien wanted to go back to the kitchens to meet the chef.

Gratien: Dans la cuisine, j’étais comme un enfant dans un magasin de jouets. Je regardais tout, j’observais tout, j’essayais de comprendre. Et je me suis rendu compte que j’adorais ça. J’ai pensé : « J’adore cet endroit. Je me sens bien. J’aimerais tellement faire ce métier. »

Ngofeen: But outside the restaurant, in the cold November air, reality hit Gratien, like a brick. He wasn’t a chef. He’d never be a chef. He was an accountant. An amateur who cooked for his parents and a handful of friends on the week-ends. The closest he’d probably ever come to haute cuisine was watching Top Chef on TV. It was crushing.

Gratien: Alors, je suis rentré chez moi. J’ai continué à regarder Top Chef. Qu’est-ce que je pouvais faire d’autre ?

Ngofeen: Gratien thought he’d never be a professional chef. But later that winter, he read an announcement on Top Chef’s website that made him stop in his tracks.

Gratien: Cette année, le concours allait être ouvert aux cuisiniers amateurs ! Tout de suite, je me suis dit : « C’est maintenant ou jamais. Je dois essayer. »

Ngofeen: The eleventh season of Top Chef would begin with a spinoff called Objectif Top Chef… a nationwide search for cooks with major culinary talent. For the first time, amateur cooks were allowed to compete. Gratien filled out the online application. He didn’t think anything would come of it. But a month later, the show’s producers called him back!

Gratien: J’ai passé toutes les étapes du casting en avril, d’abord par téléphone, puis en personne. En mai, j’ai eu la réponse. J’étais sélectionné pour participer à l’émission Objectif Top Chef. Je ne pouvais pas le croire.

Ngofeen: In June 2019, Gratien took the train down to a castle in Bordeaux to compete in the first round of Objectif Top Chef. To him, it felt like a dream come true. But he was also very nervous. He was one of 108 cooks. And he felt like he stood out.

Gratien: J’avais l’impression d’être le seul amateur. La plupart des candidats étaient cuisiniers. Ce n’étaient pas des chefs, mais ils travaillaient dans des restaurants, ou ils avaient étudié dans une école de cuisine. Quand j’ai dit que j’étais comptable, un candidat a dit : « Moi, je ne vais pas perdre contre un amateur. »

Ngofeen: The judge of this preliminary round was a formidable French chef called Philippe Etchebest. Gratien was in awe of him.

Gratien: Philippe Etchebest est très célèbre en France. Et moi, je l’admire beaucoup. Il a une étoile au guide Michelin, il a gagné un concours professionnel très connu en France, et il fait partie du jury de Top Chef.

Ngofeen: On the first day of filming, Gratien walked through the grounds of a magnificent castle, and he set foot in the courtyard right in front of the castle. It had been turned into the set of a cooking show. It was a very sunny day, and it got very hot. Gratien could feel sweat trickling down the back of his neck.

Gratien: Pour la première fois, un chef professionnel allait juger ma cuisine. C’est facile de cuisiner des plats pour ma famille et mes amis. Mais est-ce qu’un grand chef pouvait aimer ma cuisine ? Ce n’était pas la même chose. La haute gastronomie et la cuisine à la maison, ce sont deux mondes différents. Je ne voulais pas être ridicule.

Ngofeen: For the first round, the candidates could prepare their best dish. Gratien chose to prepare a dish with ingredients from his home region. The Ardennes region isn’t really known for its cuisine, but Gratien concocted a dish centered around a local red-breasted turkey called la dinde rouge des Ardennes.

Gratien: C’est une dinde sauvage, avec un goût assez fort. Elle est typique des Ardennes.

Ngofeen: Gratien wanted to impress chef Etchebest and showcase all the different techniques he had learned watching the show. So he poached a turkey breast, le blanc, in a special broth. Then he sauteed it in a pan to caramelize it.

Gratien: J’ai cuit le blanc de dinde dans un bouillon, puis je l’ai caramélisé dans du beurre. J’ai cuisiné des légumes de différentes façons, et puis je les ai servis avec la dinde. Je voulais contraster les textures, pour montrer au chef les différentes techniques que je maîtrisais.

Ngofeen: Gratien was cooking to impress. The ingredients were simple, fresh and local, like the ones he had grown up with. But with careful preparation, Gratien hoped his dish would win over chef Etchebest.

Gratien: Quand le chef a goûté mon plat, j’ai essayé de lire l’expression sur son visage. Il a goûté une première fois, puis une deuxième. Il est resté silencieux. C’était tellement long. J’étais très stressé. Enfin, il a dit : « C’est excellent ! La cuisson est parfaite. »

Ngofeen: Gratien could hardly believe it! Chef Etchebest gave Gratien’s first dish 5 out of 5, the highest grade awarded on the show. After that, Gratien’s confidence grew. He was ready to experiment.

Gratien: Je n’avais pas autant d’expérience que les autres candidats. Mais j’étais prêt à travailler encore plus ! À chaque plat, je donnais le maximum. J’essayais des préparations très complexes. Je voulais réussir des choses difficiles. Le chef Etchebest a remarqué mes efforts, et il m’en a parlé. Je me suis senti tellement fier !

Ngofeen: The contests were filmed at the castle over a period of two months. Between each round, Gratien would return home. He was supposed to keep the results of each round a secret, but as Gratien kept hopping on the train back to Bordeaux, his friends began to suspect he was doing well.

Gratien: Ce n’était pas facile de garder le secret. Mais je n’ai rien dit. Mes amis ne me posaient pas beaucoup de questions, mais je suis sûr qu’ils avaient compris. Et dans les petites villes, il y a beaucoup de rumeurs ! Des gens que je connaissais ont commencé à me demander : « Alors, quand est-ce qu’on va te voir à la télé ? »

Ngofeen: Back on set, Gratien out-did himself with every round. In one contest, participants had to bake une tarte aux pommes, an apple tart. But they were instructed to re-imagine the French classic: a crust, a custard and a layer of thinly sliced apples. Gratien prepared each of these three elements separately to create eight different flavors and textures.

Gratien: Je voulais cuisiner une tarte vraiment unique et mémorable. D’abord, j’ai préparé une pâte feuilletée. Puis je l’ai mise au four pour la faire caraméliser, et pour la rendre très croustillante.

Ngofeen: Once he had a super flaky puff pastry crust, une pâte feuilletée, Gratien set out to create a creamy almond-based filling, with apple slivers and vanilla whipped cream. Then he cooked the apples two different ways. Some poached in syrup, some caramelised in butter and sugar in the oven.

Gratien: J’ai préparé une pomme pochée au sirop d’épices. J’ai rôti les autres pommes au four. Puis j’ai combiné les pommes et la crème sur la pâte feuilletée. Enfin, j’ai ajouté un petit verre de jus de pomme alcoolisé, très froid.

Ngofeen: The candidate facing Gratien was an apprentice chef in a luxury restaurant, with a lot of experience. He had excellent technique, and he produced a classic, flawless tart. Gratien was very nervous. But when Chef Etchebest tasted both, he was impressed by Gratien’s creation.

Gratien: Je crois qu’il a été impressionné, parce que j’avais beaucoup travaillé. Chef Etchebest a dit à l’autre candidat : « Tu as beaucoup d’expérience, mais tu n’es pas sorti de ta zone de confort. Gratien est amateur, mais il a cuisiné avec son cœur. » Donc j’ai gagné cette étape. J’étais surpris, et très heureux !

Ngofeen: And when the cameras stopped rolling, Chef Etchebest came up to Gratien.

Gratien: Le chef est venu me voir. Il m’a dit qu’il avait adoré ma tarte. Je me souviendrai toujours de ce moment !

Ngofeen: Chef Etchebest coined a nickname for Gratien: “le sanglier des Ardennes”, the boar from the Ardennes, because of his drive and determination. As the weeks went by, and other candidates got eliminated, Gratien got closer and closer to the final.

Gratien: Pour moi, c’était difficile à croire. Je n’étais pas cuisinier, j’étais comptable dans une petite ville. J’avais appris tout seul à cuisiner. J’avais simplement des livres, des magazines, et puis Top Chef. Mais maintenant, un grand chef aimait ma cuisine. J’ai commencé à me poser cette question : et si je pouvais travailler dans un grand restaurant ?

Ngofeen: Back in Nouzonville, as the episodes began to air, Gratien became a bit of a local celebrity. Local people, les Nouzonnais, stopped his parents to congratulate them and chat about the show. The local newspaper ran an article celebrating his turkey recipe. And Gratien’s phone rang off the hook.

Gratien: Après chaque épisode, le téléphone sonnait. Le maire de Nouzonville m’a appelé pour me féliciter. Il m’a dit : « C’est toujours bien de voir réussir un Nouzonnais ! On espère que tu vas aller en finale. »

Ngofeen: With his whole town behind him, Gratien gave each dish he created his all. And he won round after round. First they were 108, then they were 72, then they were 36, then they were 9, until, finally, there were only 2 candidates left. Gratien had made it to the final.

Gratien: Je ne pensais pas que c’était possible d’arriver en finale. J’étais déjà fier de moi quand je suis arrivé en quart de finale. Pour les demi-finales, c’était la même chose. Mais les victoires donnent de la motivation ! Je voulais aller jusqu’en finale.

Ngofeen: When the big day came, Gratien challenged himself to his most difficult, technical dish yet: a roasted double rack of lamb, de la selle d'agneau, with delicate ravioli made of sheep’s milk, du lait de brebis.

Gratien: Pour la finale, j’ai imaginé une recette particulière. C’était une selle d’agneau, avec des carottes, et une raviole de brebis. Je n’avais jamais cuisiné ce plat. Je prenais beaucoup de risques. Mais je voulais préparer un plat délicieux et impressionnant.

Ngofeen: Back in Nouzonville, the whole town was buzzing with excitement. On the night the finale aired, Gratien’s usual café, Le Cardinal, played the episode. Dozens of Gratien’s family, friends and neighbors gathered to watch.

Gratien: Tout le monde était avec moi. C’était important pour moi. parce que j’ai grandi dans les Ardennes, et la tradition de cette région est très présente dans ma cuisine.

Ngofeen: Gratien’s supporters looked on and cheered as chef Etchebest and three outstanding Michelin-starred guest judges tasted Gratien’s carefully crafted dish. On the television, the crowd could see Gratien’s anxious, hopeful face.

Gratien: Ces chefs, ce sont des génies. Le plus difficile, c’était d’attendre le verdict. Je ne savais pas si je pouvais gagner, mais j'avais hâte d'entendre leur décision.

Ngofeen: Finally, the judges gave their decision. They did it in a dramatic way. They brought out two knives, each inside a butcher’s block, and they gave one to Gratien, and one to the other finalist.

Gratien: C’était le silence total. Le chef Etchebest nous regardait. J’essayais de lire son expression, de savoir ce qu’il pensait. Ça a duré seulement quelques minutes, mais pour moi, c’était une éternité.

Ngofeen: Finally, Chef Etchebest told Gratien and the other finalist to pull their knives out of the butcher’s block. The winning knife was silver, the losing knife was orange. Gratien pulled his out. Silver!

Gratien: Au moment du verdict, quand j’ai sorti le couteau, j’ai vu que j’avais gagné. Je n’y croyais pas ! Il y avait 108 candidats, et moi j’étais le premier.

Ngofeen: Back at Le Cardinal, everyone erupted into hugs and cheers! Champagne corks popped and glasses clinked as the village of Nouzonville toasted the victory of their homegrown chef.

Gratien: Tout le monde a fêté ma victoire, en buvant du champagne. C’était une sensation incroyable ! Mais la plus belle victoire, c’était d’avoir trouvé ma vocation.

Ngofeen: Gratien had won the contest, but more than that, he’d found his calling. In December 2019, he formally quit his accounting job to embark on his new career: chef.

Gratien: Je pense que j’ai participé à Top Chef parce que je me posais beaucoup de questions. Je me posais des questions sur ma vie, sur mon métier, sur mon avenir. Qu'est-ce que je voulais vraiment faire ? Qu'est-ce qui allait me rendre heureux ? Aujourd’hui, je peux le dire : j’ai enfin trouvé mon chemin.

Ngofeen: Gratien Leroy went on to compete in the 11th season of Top Chef, where he faced off against very seasoned chefs from well-known restaurants, and came in 7th. But he is still proud of his performance, and the friendships forged on the show landed him his first real restaurant job. Earlier this year, Gratien helped a former competitor-turned-friend launch a new gourmet sandwich and burger joint.
